Meatless Monday - Spaghetti Squash


At our house, we try to limit the number of meals that contain meat. Its cheaper, healthier, and better for the environment. We found an easy way to start this was Meatless Monday. One of our favorite meals to indulge in is spaghetti squash. Its cheap, easy to prepare, and has quickly become comfort food at our house. While the rest of the family prefers it served with marinara sauce I love it with just nutmeg and parmesan cheese. Add in a salad and some crunchy homemade bread and you are all set.



Spaghetti Squash with Nutmeg and Parmesan

Cut squash in half and remove seeds (save seeds to roast later for a yummy snack). Place halves, cut-side down, in a baking dish and bake in a 375 degree oven for forty to fifty minutes. When done baking, scrape down the sides of the squash with a fork. The squash will separate in to strands resembling spaghetti. Add a few tablespoons of butter, season with nutmeg, and sprinkle with parmesan cheese.
